Craving something crispy, quick, and keto? These gouda cheese chips practically make themselves in the oven. Light, golden, and slightly chewy in the center – just right. Paired with a creamy avocado dip with lime and garlic, it’s the perfect combo. Great as a snack, for a party, or a lazy movie night.

Ingredients

For the chips:

  • 150 g gouda cheese (sliced or a block you can slice yourself)
  • A pinch of smoked paprika (optional but recommended)

For the avocado dip:

  • 1 ripe avocado
  • 1 tbsp fresh lime juice
  • 1 clove garlic, crushed
  • Salt and pepper to taste
  • A pinch of cumin (optional)

Instructions

  1. Slice the cheese: Cut into small squares (about 3×3 cm). If using a block, slice it thinly. Thinner = crispier.
  2. Oven time: Preheat the oven to 180°C (356°F). Place the cheese pieces on parchment paper, leaving space between them. Bake for 6–8 minutes until bubbly and golden around the edges.
  3. Make the dip: Mash the avocado with lime juice, garlic, and spices. A slightly chunky texture is perfect – no need to blend it smooth.
  4. Let the chips cool: Important! Do not eat right away. Let the chips sit on the paper for 2–3 minutes. They will harden as they cool and become nice and crispy.
  5. Serve: Enjoy the chips with the avocado dip while they’re fresh and warm.

Which cheese works best?

Gouda is a classic, but other hard, high-fat cheeses also work well. Try:

  • Cheddar
  • Emmental
  • Gruyère
  • Comté
  • Any aged Swiss-style cheese

The harder and fattier the cheese, the better the crunch. Avoid cheeses with high moisture – they won’t crisp properly.
