I’ll show you a keto breakfast you can make with your eyes closed and eat with a smile. No unnecessary fuss – just an omelette, cheese, spinach, and smoked salmon. Let’s go!
For me, the kitchen is a place without stress or pressure – and a good breakfast is the best way to start your day, even if you don’t feel like cooking. Try this and see how easy it can be!
Ingredients:
- 2–3 eggs
- 30 g of cheese (cheddar, gouda, or mozzarella are great)
- 1 handful of fresh spinach (frozen works too, just squeeze out excess water)
- 40–50 g smoked salmon
- 1 tablespoon of clarified butter (or coconut oil)
- Salt and pepper to taste
- Optional: a pinch of garlic powder, chopped chives, or dill
Instructions:
- Beat the eggs lightly with a fork – no need for a lot of air. Add salt, pepper, and your favorite herbs if you like.
- Heat the butter in a frying pan (medium heat). Don’t let it burn – just melt it gently.
- Add the spinach and sauté for a minute or two, until it softens. If you’re using frozen spinach, squeeze out the water first.
- Pour the eggs into the pan and tilt the pan so the mixture spreads evenly.
- Sprinkle grated cheese on top right away – be generous!
- Place pieces of smoked salmon on top – don’t mix, just leave them as they are.
- Cook over low heat – the omelette will be tender and not dry. When the top sets slightly, you can fold the omelette in half or leave it open.
- Sprinkle with fresh herbs and serve immediately – it’s best when hot.
Tips for the kitchen lazybones:
- Don’t overbeat the eggs – less air means a creamier omelette.
- Clarified butter brings out the flavor and doesn’t burn like regular butter.
- If you want an even creamier texture, add a tablespoon of heavy cream to the eggs.
- You can swap salmon for prosciutto, bacon, or avocado.
