Keto Burrata, Avocado & Bacon Salad – Luxury in 10 Minutes
Do you ever crave something that looks like it’s straight from a fancy restaurant – but you want to eat it at home, in slippers, and have it ready in 10 minutes? Same here.
When that feeling hits, I don’t look up a recipe. I just build a plate from what I have. One day, I spotted burrata on discount at the store. I bought it out of curiosity and… fell in love.
That soft outer skin, creamy inside, milky richness – it needed something crispy, salty and fresh. And just like that, this salad became my go-to when I need a little pleasure on keto. It’s simple, gorgeous, and truly satisfying.
Ingredients (serves 2):
- 1 large ball of burrata
- 1 ripe avocado
- 4 slices of bacon, pan-fried until crispy
- A handful of arugula
- A few cherry tomatoes
- 1–2 tbsp of pumpkin seeds or pecans
- Salt and pepper to taste
Dressing:
- 2 tbsp extra virgin olive oil
- 1 tsp lemon juice
- 1/2 tsp Dijon mustard
- (Optional) Pinch of erythritol and garlic powder
Instructions:
- Fry the bacon in a dry pan until golden and crispy. Drain on paper towel.
- Slice the avocado and halve the cherry tomatoes.
- On a plate, layer the arugula, avocado, tomatoes, and burrata (whole or cut open).
- Whisk the dressing ingredients and drizzle over the salad.
- Sprinkle with seeds or nuts and top with the crispy bacon.
