Ingredients (serves 4):
- 1 small head of white cabbage (about 700 g)
- 200 g smoked bacon, diced
- 2 tbsp clarified butter (or ghee)
- 1 small onion (about 60 g – approx. 5g net carbs)
- 2 garlic cloves
- 250 g mascarpone cheese
- 150 g grated cheese (cheddar, gouda, or any melting cheese)
- ½ tsp ground nutmeg
- Salt and pepper to taste
- Optional: 1 tsp smoked paprika for a bold kick
Instructions:
- Chop the cabbage into medium pieces. Boil in salted water for 8–10 minutes until soft. Drain very well – moisture is the enemy of creaminess.
- Fry the bacon in a large pan until crispy. Add clarified butter and finely chopped onion, sauté until soft.
- Add garlic, nutmeg, and paprika (if using). Stir until fragrant.
- Lower the heat, add mascarpone, and mix until you get a creamy, rich sauce.
- Combine the sauce with drained cabbage and half of the grated cheese.
- Transfer everything into a baking dish, sprinkle with the rest of the cheese.
- Bake at 200°C / 390°F for 20 minutes until the top is golden and bubbling.
