Keto Chicken in Creamy Sun-Dried Tomato and Spinach Sauce

This keto chicken dish is one of those recipes that looks and tastes like something you’d order in a nice restaurant – yet it comes together in under 30 minutes. Perfect for a quick lunch or a cozy dinner.
The sauce is creamy, aromatic, rich in flavor – and, best of all: totally keto-friendly.

Ingredients (serves 2):

  • 2 chicken breasts (approx. 150–200 g each)
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1/2 tsp garlic powder or 1 fresh garlic clove, minced
  • 6–8 sun-dried tomatoes in oil (cut into strips)
  • a handful of fresh spinach
  • 150 ml heavy cream (30% or 36%)
  • 30 g grated Parmesan cheese
  • optional: pinch of chili flakes or ground nutmeg

Instructions:

  1. Sear the chicken:
    Season the chicken breasts with salt, pepper, and garlic. Heat the olive oil in a skillet over medium heat (about 5–6 out of 10 on the heat dial). Sear the chicken for 5–6 minutes per side, until golden and cooked through. Transfer to a plate.
  2. Make the sauce:
    In the same pan, lightly fry the sun-dried tomatoes (about 1 minute). Add the cream, Parmesan, and optional spices. Simmer on low heat for 2–3 minutes, until the sauce thickens.
  3. Add the spinach:
    Stir in the fresh spinach and cook until just wilted – this takes only a moment.
  4. Combine:
    Return the chicken to the pan. Simmer for another 2–3 minutes to soak up the flavors.
  5. Serve:
    This dish pairs beautifully with cauliflower mash, roasted zucchini, or simply as a rich one-skillet keto meal.
